Bromelain Dosage: GDU vs. mg, and Why Timing Changes What It Does

The honest answer

Bromelain dosing has two separate confusions most labels don't resolve. First: potency is measured in activity units (GDU/MCU/FIP), not mg — there's no single public conversion factor between them, since potency is assayed per manufacturing batch. Second: trial doses vary a lot by use case — the sinusitis pilot used ~3000 FIP/day; surgical and osteoarthritis trials used 800–1000mg/day. There's no RDA or upper limit because bromelain isn't an essential nutrient.

Three unit systems, no universal converter

Bromelain doesn't have one settled "mg per day" number the way a vitamin does — the label weight (mg) and the actual proteolytic activity are two different numbers, and the split matters more here than for most supplements on this site. U.S. labels most commonly disclose GDU (Gelatin Digesting Units) or MCU (Milk Clotting Units). The German-language clinical trials behind much of the surgical-swelling evidence — including Bormann et al. 2016's dose-finding study, which tested 1000, 3000, and 4500 FIP — use FIP (International Pharmaceutical Federation) units instead. There is no single public conversion factor that reliably translates GDU to MCU to FIP across brands, because potency is assayed per manufacturing batch, not by a fixed formula. Timing: between meals vs. with meals

Timing is use-dependent, and it matters more for bromelain than for most supplements on this site. For systemic/anti-inflammatory use (sinusitis, post-surgical swelling, joints) — take it between meals, on a relatively empty stomach. The reasoning: a protease with no competing dietary protein to digest is more likely to be absorbed intact rather than spent digesting food, indirectly supported by Passali et al. 2018's finding that orally dosed bromelain does reach sinonasal tissue. For digestive use (helping break down a meal's protein) — take it with meals, the opposite instruction. How to think about dose

  • Match the unit system to the use case, not just the mg. A 500mg capsule at 1,200 GDU and a 500mg capsule at 3,000 GDU are not the same dose — check the label for activity units before assuming two products are interchangeable.
  • More isn't automatically better. Bormann et al. 2016's dose-finding trial found 3000 and 4500 FIP showed no superiority over the standard 1000 FIP dose for post-surgical swelling.
