The Garlic Allicin Problem: Why "1000 mg" Isn't the Dose

The short answer

The big number on a garlic label — "1000 mg," "2400 mg equivalent" — is fresh-garlic equivalency or powder weight, not allicin. And here's the part almost no one is told: allicin isn't in the intact clove. It forms only when garlic is crushed — from a precursor (alliin) and an enzyme (alliinase) — and alliinase is destroyed by stomach acid. So a pill has to protect that reaction, and most don't: one analysis found 83% of enteric brands released <15% of labeled allicin (Lawson 2001). Of the 12 products we track, only 6 use a route built to deliver: enteric/stabilized allicin, or aged garlic extract.

The three facts that don't fit together

  1. The active is allicin — which isn't in the clove. Whole garlic stores a precursor, alliin, and an enzyme, alliinase, in separate compartments. Crushing (or chewing) brings them together, and only then does allicin form. An intact clove — or an intact tablet — contains essentially no allicin until that reaction runs (Lawson 2001).
  2. Stomach acid breaks the reaction. Alliinase is inactivated by stomach acid. Swallow a plain garlic tablet and the acid can shut the enzyme down before the allicin reaction completes, so little or no allicin is produced. That's why "how much garlic is in it" is the wrong question — the real question is whether any allicin actually gets made and absorbed.
  3. The label prints an equivalency, not delivered allicin. "1000 mg" and "2400 mg equivalent" describe fresh-fruit equivalency or powder mass. Delivered allicin is a small, variable fraction of that — and it is not proportional to the marketed number. So the figure you see and the figure that matters are decoupled.

Put together Because the active is a fragile compound that isn't in the clove (fact 1), the stomach destroys the enzyme that makes it (fact 2), and labels advertise an equivalency instead (fact 3), the big number on the front tells you almost nothing about the allicin you'll actually absorb. A "2400 mg equivalent" plain-powder softgel can deliver less active than a small enteric allicin tablet or a modest dose of aged garlic extract. Lawson put a number on it: 83% of enteric-coated brands released under 15% of their labeled allicin in simulated digestion (Lawson 2001).

The two routes that actually work

Delivery isn't hopeless — two forms solve the problem in different ways:

Good enteric engineering can work — a well-made enteric tablet can release the great majority of its allicin, and aged garlic extract's S-allylcysteine is stable for around a year (Lawson 2005). The problem Lawson documented is that most products don't achieve it, so you can't assume a coating works just because it's there.

The delivering products (and why they're worth it)

Exactly 6 of the 12 products we track use a delivering route — 3 aged garlic extract and 3 enteric or stabilized allicin. Those are the only ones where the dose maps to what the research measured. For blood pressure specifically, the strongest data is on aged garlic extract; the cheapest AGE we track is Kyolic Aged Garlic Extract Formula 100 (200 Capsules) ($0.24/serving), the same class used in the trials (Ried 2016). The other 6 — plain powders and garlic oil — print a big "equivalent mg" that isn't allicin, so no matter how large the number, you can't assume the active reaches your blood.

What to actually do

  • Ignore the "equivalent mg" number. It's fruit/powder weight, not delivered allicin. Look at the form instead.
  • Choose a delivering route. Aged garlic extract (standardized to S-allylcysteine) or enteric/stabilized allicin (standardized "allicin potential" in mcg) — see the dosage guide for the target amounts.
  • Don't assume a coating works. Most enteric products in Lawson's test under-delivered; prefer brands that state a standardized allicin potential, and aged garlic extract for the strongest BP evidence.
