Why "just take more" doesn't fix the bioavailability problem
It's tempting to assume that if serum carnosinase degrades most of an oral dose, the fix is simply a bigger dose. That doesn't hold up mechanistically: carnosinase is an enzyme, and its activity scales with substrate availability up to a point — flooding the bloodstream with more carnosine doesn't change the fact that the enzyme is actively working to break it down before it reaches muscle. Gardner 1991 established that a meaningful fraction (~14%) of an oral dose is absorbed intact, which is a fixed absorption ceiling, not something a bigger dose overcomes proportionally. And Harris 2006's finding — that beta-alanine, not carnosine, is what actually raises muscle carnosine via synthesis inside the muscle cell — doesn't depend on carnosine dose at all; it's a different molecule taking a different, carnosinase-resistant path.
